This Festive Salad is very informal and perfect as a Starter. Fruity but nonetheless light, it feels like a Winter Wonderland in the palate. This Vegetarian number is quirky and made with the humble Brussel Sprout right in season. 

Putting it all Together
Festive December Salad.
Timing

  • Servings: 4 to 6 portions.
Ingredients

Brussels Sprout, depending on the number of people, (4 to 6) 750g to 1kg.

Apples, Braeburn, 4.

Dried Cranberries, 250g.

Walnuts, 200g.

Pomegranate Seeds, a handful.

Cider Vinaigrette.

Optional: Lardons, Grapes and chopped Shallots.

 

Steps

Brussels Sprouts are most often disliked however they are often part of the Christmas Dinner, therefore a lot of Brussels Sprouts are found on Supermarket Shelves during December. I will add that this miniature Cabbage is more versatile that what we tend to think of. It can be eaten washed and raw, part boiled, roasted, stir fried or sautéed, and of course fully boiled to crucifixion.

In this recipe Brussels Sprouts are first cleaned and trimmed then part boiled/ blanched for 5 minutes to get a little bitter taste out of them. Because they can be too bitter.

The next step is to shred them, chop them in order to make the Salad. They are the base of the Salad which is best to be done in a large bowl for everyone to help themselves to.

Wash, core and chop the Apples then add them to the large Salad Bowl.

The next step is to use the dried Cranberries. The Cranberries can be soaked a little in Pommeau. Then place within the Salad Bowl.

Chop the Walnuts into pieces and add them to the Salad.

Next is the dressing of the Salad with a Cider Vinaigrette. Mix gently everything.

The last part is to decorate with Pomegranate Seeds.

This unusual Salad is Vegetarian but is not Alcohol free. The use of Walnuts which apports some texture to the Salad needs to be flagged to possible Nut allergy Guests.

Possible addition to the Brussels Sprouts Salad are multiple such as Red Grapes to compliment the fruitiness of the overall result.

Another option which can be considered is to sauté some Lardons and chopped Shallots in order to render the Salad even more lush and festive.
