This Herring Salad is quirky, nutritious and refreshing. The nutritious Herring is matched and balanced with the acidic sweetness of Apples. It has a Nordic feel, influence to it. This Herring and Apple Salad is simple but tasty.

Putting it all Together
Smoked Herring and Apple Salad.

Ingredients

2 Part Smoked and Marinated Herrings deboned Fillets.

2 Granny Smith Appled. Washed, cored and diced.

1 or 2 Red Onions, sliced into rings.

500g of Baby New Popatoes, peeled, chopped and boiled.

2 large Pickled Gherkins, sliced.

Chopped Parsley.

Caper Berries.

Chives and Sour Cream Dressing.

Seasoning: A little Smoked Sea Salt and crushed Pink Peppercorns.

4 Black Peppercorns.

The Juice of 2 to 3 Lemon.

 

Steps

First it is a matter of boiling the peeled and chopped (diced) Potatoes, in a cooked but nearly al dente fashion.

Make sure that all bones are remove from the Herring Fillets. The skin can be left but descaled.

The next step is to marinate the Fish lightly and shortly (5 to 10 minutes), in either, Lemon Juice, Grapefruit Juice or Orange Juice with 3 to 4 whole Black Peppercorns within it.

Meanwile core the Granny Smith Apples and chop them up in a dice like fashion. Put them in a large Salad bowl. 

Peel and slice the Red Onions and add them to the Salad Bowl.

Slice the pickled Gherkins to add them to the Salad.

Chop the Fillets of marinated Herring in small mouthful size pieces. Put them in the Salad.

Don't throw the Lemon Juice Marinade, add part of it in the Salad bowl to prevent the apples from turning brown but to also add a slight acidity to the Dish. But remove the Black Peppercorns.

Drain and dry your Potatoes. They are the next addition to the Salad Bowl.

Chop the Parsley to finish off the Salad then season with  a little crushed Pink Peppercorns and Smoked Sea Salt.

For decoration as well as taste add the Caper Berries (the large ones).

Mix together the Herring Salad ever so gently with the long Salad Fork and Spoon. 

Prepare the Sour Cream and Chives Dressing to be served on the side then the Herring and Apple Salad is ready to be enjoyed. This Scandinavian style Salad works at its best in late Summer, early Autumn.
