This simple Salad can conjure up the flavours of early Autumn. The Spinach mixed with Gem Lettuce gives it body. But the character is given by the Gorgonzola Blue Cheese.

Putting it all Together
Gorgonzola, Spinach and green beans Salad.
Timing
  • Preptime: 15 minutes. Assemblage.
  • Cooktime: 5 to 10 minutes.
  • Servings: 2-4 portions
Ingredients

400g of Spinach.

250g of Gorgonzola Cheese. Other Blue Cheeses could be Roquefort or Dolcelatte.

3 Baby Gem Lettuces. 

200g of long Green Beans.

French Vinaigrette.

Optional: 2 chopped Shallots. A handful of Walnuts.

Steps

First put a deep pan of Water upon the stove to boil.

Trim the French Green Beans and put them in the pan to part-boil only. 5 to 10 minutes will suffice.

Meanwhile wash the Spinach and the leaves of the Gem Lettuces to clean them from any impurities.

Place the leaves in a large Salad bowl.

If using peel and chop the Shallots in small pieces and add to the bowl.

Drain the Green Beans and let them cool for a minute or two.

Chop the Blue Cheese into nice little chunks (bite size). Put it into the Salad.

Add a hanful of Walnuts if using and the Green Beans.

Pour the French Vinaigrette.

Mix gently everything together and serve.

This simple Salad is pack full of goodness.
