When the Sun is shinning and you do not want to do too much cooking, those Prawns Skewers can come to the rescue. Easy to put together, that Dish is so enjoyable to eat  al fresco, with friends sharing a bottle of crisp Sauvignon Blanc. It does speak about 'La Farniente'.

Ingredients

Prawns, about 50 to 100 Prawns: 5 per Skewer and 5 Skewers per person. Shelled.

Cucumber, 2.

Limes, 2.

Tomatoes.4.

Parsley or Chervil, bunch, chopped.

Orange Blossom Honey 4 tbsp.

Smoked Paprika 4 tsp.

Virgin Olive Oil, drizzles.

White Wine Vinaigrette.

Seasoning: Smoked Sea Salt, cracked White Peppercorns.

Steps

This is an easy Summer Dish to prepare which can make a perfect Al Fresco Lunch with Friends. Those Prawns Skewers can also be the Starters of a Summer Dinner Party.

To get some already shelled Prawns makes life easier but also save a considerable amount of time. Precious time that you can spend with Friends chatting instead.

The first task is to soak the wooden Skewers in a bowl of Water. Leave them in the Water for roughly 15 minutes give or take. This will prevent the Skewers to burn when facing the heat of the Grill or the BBQ.

In the meantime wash the Prawns and make sure that their intestinal tracts have been removed. Set them aside in a marinade bowl. The Marinade is made of the Juice of 1 to 2 Lemons, Salt and Pepper Seasoning, the Smoked Paprika, a good drizzle of Olive Oil and the Honey. Let the Prawns in the Marinade for 5 minutes to absorb the flavours.

This gives time to prepare the Salad which consists of firm and fresh Tomatoes, chopped, or cut into wedges and of sliced or diced Cucumbers. The choice of Dressing is at the end of the day yours, however a White Wine Vinaigrette works well but also another option can be a French Dressing. Toss a little.

Pre heat the Grill, after covering the grid with foil to prevent the Prawns from sticking on the grid. Pat dry the wooden Skewers.

Then it is the time to put the Prawns upon the Skewers. You are looking at placing 5 Prawns on 1 Skewer, but aiming to serve 5 Skewers per person. Therefore the Grilling has to be done in batches of about 10 skewers at a time. The overall cooking time is short since the Prawns have been parcially cooked within the acidity of the citrus Marinade. Well within/under 5 minutes the first batch of Prawn Skewers is done.

Serve the Prawns Skewers with the simple Summer Salad, top with chopped Parsley for decoration and taste. Add the Lime wedges upon the plates.

This Dish can come with accompaniements to be chosen from like Dipping Sauces: Sweet Chilli Sauce, Paprika Mayonnaise, Tzatziki, Sauce Mousquetaire, Aioli...

If this is a lazy Summer afternoon Meal, it can be easily tweacked to become more elevated. Swapping Prawns for Langoustines for exemple and adding Radicchio Leaves or red Chicory Leaves to the Salad can be considered for greater effect. Small additions like White Mustard Micro Leaves, a pinch or two of Black Sesame Seeds, a pinch of Chilli Flakes do contribute to taste and texture. Enjoy with a Dry to Semi dry British Sparkling White Wine.
