This little number is rather complicated to do but rather healthy, but you mustn't have a nut allergy because it does contain seeds, lots of them. Those Pumpkin and Sunflower Seeds are almost the main element of that Tartine. It is complimented by a layer of Avocado spread across the top. Then it is finished by a simple fried Egg sunny side up. It is a simple Brunch affair but it does take preparation.

Ingredients

To make the rectangular loaf Bread:

Almond Flour, 150g.

Dark Rye Flour, 125g.

Maple Syrup, 2Tbsp.

Apple Cider Vinegar, 1 Tbsp.

Sunflower Seeds, 100g.

Pumpkin Seeds, 100g.

Black Sesame Seeds, 50g.

Pomegranate Molasses, 1Tbsp.

Mineral Water, 200 ml.

Salt, 1 Tsp.

Optional: Caraway Seeds, baking powder.

Avocadoes, 2 to 3.

Free range Hen Eggs, 2 .

Optional: Fresh red Chilli deseeded and chopped, 1 small red tomato peeled desseded and chopped, Chilli Flakes or cracked Szechuan Pepper.

 

 

 

 

 

 

Steps

The first step is to create the Bread the day before and to put it overnight in the fridge. It is a heavily seeded Bread which is not for all but it has a health factor to it but not if you do suffer from nut allergy, then do not try this at home and at all. 

To make the Bread, brush Olive Oil within a rectangular Loaf tin, then place within it a large piece of cling film (oven proof one) to do the contour of the inside of the entire tin including the inside base. Then brush the covered inside of the tin with Olive Oil. The cling film will help the Bread not to stick to the edges, therefore it will be easier to remove it from its mould.

Then put the dry ingredients in a large bowl (the Flour, the Seeds) and mix them, together. In another smaller bowl or jug mix the wet elements such as the Water, Cider Vinegar, the Molasses, the Maple Syrup...

The next step is to bring everything together (Wet and dry ingredients) gradually within one another in order to mix the dough together. If you use a raising agent like baking powder, you can let your dough rise for about an hour in its bowl covered by a tea towel. 

Then put the result within the Loaf tin. It will knock back a little the rise but for good effect. It will render the Bread lighter than heavier as a result. Make sure everything fits every corner of the baking tin. Place the Bread in the oven for an hour at 350 degrees/gas mark 4 (177 in Celsius). 

Let the Seeded Bread cool down afterwards for half an hour. Then you can place it in the fridge to stay overnight covering it with cling film. It will get more density there but also binding and structure ready to be out of the mould the following day (or 6 hours minimum). 

Depending on the cuting, the Seeded Loaf Bread can provide 6 to 10 slices. If it is for you only and just your treat for a Brunch the rest can freeze well and be used later within 2 weeks.

If you are not inclined or have the time to go through all the struggle to make that Bread, the easy way is to simply buy a good seeded bread at the Supermarket or better at a Farmer's Market. They are nutritional. The choice needs to be for thick slices though for the rest of the elements of the Brunch to not dig themselves a hole within the Bread.

Speaking about the other ingredients making the Seeds Tartine sing, one of them is Avocado. The Avocadoes are to be peeled and stoned before being crushed with a fork into a workable spread for the Bread. A little Lime juice keeps the Avocadoes green but also gives them a nice acidity.

One option is to make the Avocado spread like a Guacamole with Tomatoes and Chillies for even more flavours. The texture can be chunky or you can make it smooth by blending it. However my preference is the one where you can see where is the bits of Chilli and Tomatoes. Spread the Avocadoes mixture upon the Seeds Tartine.

The, almost, last step is just to fry an Egg the way you like it. Sunny side up is more attractive and decorative. Then to place the Egg on top of the Tartine above the Avocado Spread is a little moment when you think for yourself Brunch is finally here. However you can add some final touches of your own like Chilli Flakes, or crack some Szechuan Pepper other the top of the Egg. Add some Basil leaves. But then take a seat to enjoy the Brunch.
