This Smoked Salmon Salad gives a little lavishness to a Summer evening. It is a light yet elegant Starter. Although the Smoked Salmon and the Yellow Flesh Melon or a Yellow Flesh Watermelon are the stars of the show, the choice of Salad Leaves brings this dish together by adding colours and textures. The soft boiled Eggs are also cherries  on the top of the cake/salad.

Ingredients

4 Eggs.

500g of Smoked Salmon.

2 Limes.

1 Yellow Flesh Watermelon or a Honeydew Melon. Cut into pieces with no seeds and skinned.

300g of Lambs Lettuce or Pea Shoots.

1 Radicchio.

1 Frisée Lettuce.

White Wine Vinaigrette with Dill and Virgin Olive Oil.

 

Steps

The main thing to concentrate upon is the soft boiling of the Eggs for this Salad. Because the Eggs as much as the Smoked Salmon are about presentation.

The first step is to separate and wash your Salad Leaves then to dry them. The next step is to put them together in a large Salad Bowl. But do not season them yet with the Dressing. Just make sure they are clean. For the Salad make it simple but colourful and also a play on texture and taste. Lamb's Lettuce gives a bit of soft pepperiness, Radicchio is bringing its brash burgundy colours and bitterness then the Frisée Lettuce add its tenderness and quirky look. 

The second step is to prepare the Melon or Watermelon.  This is the Summer side or part of this Salad. It brings the sweetness and freshness into this starter. A yellow flesh Melon or Watermelon  gives almost a glow upon the plate. One thing to take care of is to remove the skin of the Melon but also to remove all the seeds. Then it is a matter of cutting the Melon into manageable pieces to eat.

Third prepare your dressing. 

Cut your Limes into wedges.

Boil the Water for your Eggs. It will take 6 to 7 minutes to soft boil them and have a ready bowl of ice cold Water to cool them straight away. Then rest them for a minute or two in a drainer.

Put you Dressing on your Salad Leaves and toss to get an even coating.

Start presenting your Salad Leaves upon plates. 

Add the Smoked Salmon in evenly portion upon the plates.

Place the Lime wedges and the Melon in strategic places for colour impact: Appetizing the eyes does appetize the stomach.

Then it will be time to carefully remove the shells from the soft boiled Eggs, to half them or quarter them, and then to put them on the plates.

The Smoked Salmon Summer Salad Starter will be then ready to be enjoyed.
