Simple and easy this is just a put together healthy Salmon dish. It makes a midweek Dinner sings. Maybe not Saturday Night Fever... But more likely a healthy Wednesday night pick me up boost.

Putting it all Together
Salmon and Broccoli Tray Bake.
Timing
  • Preptime: 10 to 15 minutes
  • Cooktime: 20 to 25 minutes.

Ingredients

4 Salmon Fillets Cuts.

2 Broccoli Heads.

2 Red Onions.

2 Lemons.

Some Thyme or Lemon Thyme.

1 chopped Garlic Clove.

A little Olive Oil.

Seasoning: Sea Salt and cracked Black Peppercorn.

Optional: Lemon Zest, a handful of flaked Almonds, 75ml of White Wine, 100ml of Veg Stock. A drizzle of Honey.

 

Steps

First put the oven on at gas mark 4 to preheat.

Then peel and chop the Red Onions.

Boil the kettle to prepare a quick Veg Stock.

Prepare a deep baking tray with a little Olive Oil.

Chop, peel, a Garlic Clove and put it in the tray.

Add the Red Onions.

Clean and break your Broccolis into florets. Place in the tray.

Make sure the Salmon Fillets are skinless and boneless.

Position them upon the tray then season. Add a drizzle of Olive Oil and a tiny bit of runny Honey.

At this point a handful of flaked Almonds is welcomed if used. (Nut allergy warning)

Put the dish in the oven.

Prepare the Veg Stock with the mix of Sauvignon White Wine. It is just a stir.

Take the leaves out of the Thyme. 

Slice the Lemons.

Then at ten minutes past, turn the Salmon Fillets. Add the Stock/Wine mix, and the Thyme and another drizzle of Honey upon the Salmon.

After ten more minutes, give or take, it will be ready to serve.

Finish it with slices of Lemons. 

This Salmon Dish is a healthy midweek one.
