This Lunch is a quick and simple mainly boiling affair. It marries Udon Noodles with Soft boiled Eggs and Dwarf French Green Beans. Spices are added mainly with one or two Raam Chillies.

Putting it all Together

Ingredients

Udon Noodles 250g to 500g.

4 Eggs (Hen or Duck)

French Dwarf Green Beans 250g.

1 or 2 Chillies. Red preferably and of the Raam variety.

A heaped tablespoon of Sesame Seeds.

1 or 2 crushed Garlic Cloves, peeled.

Light Soy Sauce.

Optional: Shreds of peeled Ginger. Sliced Spring Onions 3 or 4. A drizzle of Rice Wine. Shitake Mushrooms 200g.

Serve with either Teriyaki Sauce or Hoisin Sauce on the side.

Steps

The first step is to put three saucepans upon the stove with Water to boil.  Put good pinches of Salt in two pans and a tablespoon of Rice Vinegar in another.

In one of the salted pan put the Udon Noodles. Dry Noodles take upon 10 to 12 minutes to cook.

Place the Duck Eggs in the Rice Vinegar boiling Water Pan. 7 to 8 minutes will give soft boiled Eggs for a Salad, 9 to 10 minutes is to have a harder consistency. Preference wise Duck Eggs have larger yolk which are very lush and rich.

Meanwhile chop the Green Beans and put them in the other salted Water boiling pan.

Chop the Spring Onions, Ginger and Shitake Mushrooms, crushed Garlic if using and sauté them gently in a frying pan with a pinch of Five Spice and a drizzle of Groundnut Oil.

Drain and cool the Duck Eggs in a bowl of Iced Water.

Slice the Chillies. They can be used hot or raw. If hot add them to the Shitake Mushrooms pan.

Drain the Udon Noodles while warming a couple of plates.

Quickly shell the Eggs and quarter them up. Place them on the plates.

Add the Udon Noodles. 

Drain the Green Beans and add them upon the plates.

If used, add the garnish of Shitake Mushrooms, Ginger, Garlic and Spring Onions.

The sliced Chilli comes last for the kick.

However serve the dish with Sauces to choose from. Either Teriyaki Sauce or Hoisin Sauce. But Light Soy Sauce is a must

Lastly sprinkle with Sesame Seeds..
