This Summer Salad is not for everyone because it does have Octopus as the star of the show. It is not to everyone's taste unfortunately. But on holiday, you may have enjoyed the taste of the Med' and encountered dishes featuring Octopus tentacles. This little Salad works like a summery of Summer holidays.

Ingredients

One Octopus.

Cherry Tomatoes, either colour: red, orange or yellow. Cut in half or quarter. 750g.

Courgettes, 2 to 3, chopped (not peeled).

Lemons, 2.

Capers, 6 Tablespoons.

1 to 2 Red Onions, chopped.

Flat leaf Parsley, a handful.

Italian Dressing, (Balsamic based and Olive Oil based) to your liking to be served with the Salad. Served seperately for everyone to help themselves.

Optional: 1 or 2 Sweet Bell Peppers, chopped; Green Olives, pitted, a handful; glasses of Limoncello to accompany the dish...
