The Goulash is fairly simple to do. If it does not take a lot of efforts to prepare but it takes a lot of love to do and you will smell its comfort warming scent when it is ready to warm your heart and belly.

Cubed Beef 500g to 1Kg

A couple of banana Shallots or 1 large Spanish Onion, diced.

250g of Chopped Fresh Tomatoes.

400g Tin of chopped Tomatoes in their Juice.

A couple of minced and peeled Garlic Cloves. 

3 Sweet Bell Peppers, deseeded, and roughly chopped.

1 Table spoon of plain flour to coat the Meat and to brown it.

2 chopped Chillies of your liking with the seeds or deseeded.

500 ml of Beef Stock.

1 Table spoon of Smoked Paprika.

1 Bouquet Garni.

Seasoning: Sea Salt and Black Peppercorns. 

Chopped Parsley. 

Steps

Browning the Meat is the first step. So cover the base of your Stewing Pan with Vegetable Oil.  Put it upon a medium heat Stove Burner. Blanket the Cubes of Beef with Plain Flour, a light covering will do. Then just brown them slowly but surely. You are not in a hurry. We are just building up a Stew.

While this is happening chopped finely either your Shallots or your Onion. Minced your peeled Garlic remove the Beef from the Pan and add your Shallots and Garlic instead to the Pan. Let them sizzle in the Beef Juices.

The next step is to deal with your Bell Peppers, chop or strip, the choice is entirely yours. The same applies to the colours of your Bell Peppers. you can go for any colours really. The important thing is you must have at the very least three of them to give you a Mothership of a portion to fill your boots and stomach up.

Three Bell Peppers, chopped Onions and minced Garlic go into the Pan.

Then add the chopped Chilli and return the cubed Beef to the Pan. Next comes your juicy Ingredients. Your Fresh diced Tomatoes, your Tin of chopped Tomatoes, and your Beef Stock. Put your Bouquet Garni. Bring everything down to the lowest heat and let it simmer away. Half way through add your Smoked Paprika and your Seasoning.

When everything is added in the Pan, let it simmer gently and reduce down to condense the flavours together.

Once your Beef cubes are melting in your mouth or just almost it is ready to serve. That dish is not a fancy affair, it is a comforting one rather than anything else. Serve the Goulash in Bowls along with a Sourdough sliced Bread on the side.
