This is a delightful Vegetarian Salad to have for Lunch. Simple yet fulfilling, the Rice Balls can be eaten cold, warm or hot. But they are most enjoyable cold like Sushis are. The Radicchio provides colour, contrast, crunch and a little bitterness to the Salad. The Cress adds the dash of Pepperiness. And the Broccoli and Green peppers are there to remind us of how good it is to eat our Greens. This is a healthy Salad which anyone should try.

Putting it all Together
Black Sesame Rice Balls Salad with Broccoli and Radicchio.
Timing

Ingredients

Sushi Rice, or Glutinous Rice, 250g.

Broccoli Head, 1.

Radicchio, 1.

Lamb's Lettuce, 150g.

Sweet Bell Green Pepper, 1.

Black Sesame Seeds, a Handful.

Cress, 2 Tbsp.

Frisée Lettuce, 100g.

Rice Vinegar Dressing.

Optional: Sesame Oil, Szechuan Peppers, Nori Sheet, Light Soy Sauce.

 

Steps

The First Step is to cook the Rice.

Once done let it cool a little, add the Black Sesame Seeds then drizzle them withToasted Sesame Oil. Roll the Sushi Rice into balls of about 2 cm in diametre.  Cover with cling film each Rice Ball and put the Rice balls into the Fridge until firm, between 10 and 20 minutes.

The rest of the Salad does not need to be cooked. Break apart the Broccoli Head into Florets. Place the florets into a large Salad Bowl. Add a handful of Sesame Seeds.

Split a Radicchio into leaves then shred the leaves. As well as colour the Radicchio does give texture and crunch. But also it brings a welcome bitterness. Put the Leaves in the bowl.

Deal with the Green Sweet Bell Pepper by deseeding it then slicing it into battons. Add it to the Salad Bowl as well as the Lamb's Lettuce and the Cress. The Cress does give a pepperiness to the Salad.

For more texture, a soft and pretty one, is the addition of Frisée Lettuce Leaves.

Last but not least, dress the Salad with Rice Vinegar Dressing before dividing it in to two and placing the Black Sesame Rice Balls.

This is a very healthy Lunch to enjoy.
