The Multi Raclette uses multiple Cheeses, from Emmental to Raclette passing by Reblochon slices. But it also uses and arrey of Toppings to choose from. Usually the accompaniements for a Raclette goes underneath the melted Cheese but this time around they do go above the Cheese like for a Pizza.

  • Preptime: 10-15 minutes. Assemblage.

  • Servings: 4 to 6 portions.
Ingredients

Raclette Cheese 6 slices per person.

6  slices of Reblochon and 6 slices of Emmental Cheese.

Baby Button Mushrooms, Chestnut ones, 200g.

Pepperoni Slices 30.

Gherkins, 150g.

Pickled Pearl Onions, 100g.

Red Chilli Sliced, 2.

Franckfuter Sausages, 12.

Cherry Tomatoes, half, 200g.

Baby New Potatoes, 250g, sliced, part boiled then grilled.

Steps

First peelthe Baby New Potatoes, slice them and part-boil them for 5 to 10 minutes. 

In the meantime plug your Raclette device  for the Heating element to have the right temperature in order to melt the slices of Cheeses when the time comes.

Cut all the Tomatoes in half, and season them with Salt and Pepper, place them in a bowl on the table.

Drain the Baby New Pototoes, and put them in a bowl with a knob of Salted Butter, and some chopped Parsley. Stir gently for the Butter to melt within the slices of Potatoes. Put the Bowl on the Table.

Prepare the Mushrooms by getting rid off the impurities by wiping them off with a Paper Kitchen Towel. Slice the Mushrooms rather thinly. Put in a bowl  and place on the Table.

On a platter arrange the Pepperoni slices and the Frankfuter Sausages. Both can be eaten raw however griddling them on the Heating Plaque above the Raclette device is a plus. Put the Platter on the Table.

Drain the Jar of Gherkins and the Jar of Pickled white Pearl Onions (also called Grelot). Pour the content into a bowl to be placed on the Table.

Slice a couple of Red Chillies, seeded or deseeded, put the slices in a little Ramequin and present them on offer as an option for the Guests who like their spicy Food.

Last but not least prepare the plates for the Guests with each having 2 Slices of each kind of Cheese, therefore six slices of Cheese altogether per person: 2 of Raclette, 2 of Reblochon, 2 of Emmental. 

The best Wine to serve at a Raclette Party is a White Wine, however a Red one should always be on offer for those who prefer it. Cotes du Rhone which come either in White and also in Red, is a perfect choice. As for a non alcoholic option an Elderflower Cordial with either still or Sparkling Water works well.

The bonhomie and the convivalité of a Raclette Party will make you want to do more. I will add that it is more of an Autumnal and Winter Meal to enjoy during the cold days.
