This one is a bit of a misnomer because it is a Sandwich without being a real one. However it is a little decadent if you have a chance to do it. First, it is all about using the leftovers of a good Sunday Roast which involved Beef. Second, it can be using the Sunday Beef Roast like that straight away in a very casual and yummy fashion. However you see it, this Beef Sandwich is a midsummer treat for a lazy afternoon of indulgence with friends or alone.

Ingredients

Leftover Roast Beef, thin slices.

Butterhead Lettuce.

Ciabatta Bread, toasted.

Cucumber, 1.

Gherkins, a couple of large ones.

Red Onion, 1.

A little Fresh Bunch of Dill.

Leftover Yorkshire Pudding to use as a cup for the Ketchup Sauce.

Ketchup, 2 tablespoons.

Optional: Fruity Brown Sauce, Creamed Horseradish Sauce, Leftover Beef Gravy.

 

 

Steps

When you have leftovers, it is always nice to be able to re-use them the following day. Here, we are speaking of a large piece of Roast Beef. Maybe it is a bank holiday Monday, you are at leisure and can indulge yourself with a big homemade brunch with the leftovers of a Sunday Roast... Imagine...

The cooking is really minimal since most was done the day before. Hence the main thing to do is to prepare the Bread the way you like it. I tend to go for a Ciabatta Bread for the slices of Beef to put upon it can be large/wide rather than thick. They need space which probably a Baguette will not provide. Slices of Sourdough Bread will do the job very well as well. That Sandwich needs to have a little rusticity, some Va-Va-Voom. 

Horizontaly half the Bread then brush the side, the one without the crust, with Garlic flavoured Olive Oil, or else rub a Garlic Clove after buttering the Bread or putting some Olive oil upon the Bread. Then the Ciabatta half can be toasted, griddled or grilled for three to five minutes.

Meanwhile slice thinly the leftover Beef. Season. Prepare the leftover Yorkshire Puddings by a quick three minutes in the oven (Give or take gas mark 3). The Yorkshire Puddings are already cooked so it is just a re-heating process. They will become then crispy rather than soft in order to be the recipients for the sauces used. Beef Gravy, Brown Sauce, Ketchup, Creamy Horseradish, Tartare Sauce, Spicy Tomatoes Chutney, all work well independently within their own Yorkshire Pudd.  It also give a choice of a wide dipping zone which if ostentatious can be very welcomed and delicious during a casual Summer Party.

Clean the Butterhead Lettuce to lay its fresh leaves upon the Bread. Add the slices of Beef, in a slightly curled fashion. Then prepare the ribbons of Cucumbers and lightly pickled large Gherkins to arrange on the top of the Sandwich. Finish off with rings of sweet Red Onion and some Dill. 

There you will have a very luscious leftover Lunch with plenty of dips to dip into.
