Stuffed Shoulder of Pork.

Pork is the favourite Meat of my Man. Pork Shoulder, Pork Belly, Bacon are his first three then it will be the Ribs and the Lardons. Mines would be the Ribs, Belly and Pork Chops, then Smoked Ham and the Tenderloin of Pork. We cook either by myself or himself Pork very often. We like it crispy on the skin but also with a tender flesh.

We mainly do get our Pork from a farm nearby. The quality from that organic farm is very good. Because of Brexit many British farmers have been let down by the English governement of BJ. So it is important to help them especially if they follow good ethical practices rather than rough industrialisation of farming and deregulation.

Sunday or Boxing day Belly of Pork on a plate. My Man's one... The more and more and more...

Growing up in Normandy, I had the pleasure to have many times the Pork Chops 'à la Normande'. The Chops after being rendered are cooked within a velvety creamy Sauce spiked with Cider. Chopped Parsley and Chives, chopped Shallots, one crushed Garlic clove, Mushrooms, sliced Apples also go with the dish. It was either served with sautéed Potatoes or a gratin of Potato à la Dauphinoise. It was simple yet delicious.

Not forgetting that many produces come from Pork like Patés, Terrines and Sausages, Bacon and Lardons. Patés are so convenient all year round as snacks, to do Sandwiches, to bring to PicNic and also to serve with a Cheese Platter at the endof a Dinner Party.

As for Terrines I enjoy doing them in advance a couple of days before Christmas. I use the Terrine on Boxing Day. It is pretty simple really on the 26 th of December, I do cook but much less than on Christmas day. I do alternate year on year, it goes a little like that: one year, large Ham; following year a Terrine of Pork, Apricot and Pistachio; following year will be a large Glazed Gammon; next year it is another Terrine, a Salmon one; then the cycle start again.
