A Selection of Pulses

The family of Pulses is fairly large and Beans are within it. Amongst many it includes Lentils, Adzuki Beans, Mung Beans, Broad Beans, Garden Peas, Chick Peas, Black Eyed Pea, Bambara Groundnut, Lupins, Jack Beans, Yam Beans just to name a few. I will start by talking about Lentils.

Puy Lentils.

During my life I have mainly used Puy Lentils. Since my chilhood I have been eating them. But I did find them originaly too floury for my taste, however I developped a manner of cooking them which was not the simple boiled ones that my Mother was doing. I add Stock to them either Chicken or Vegetable ones, chopped Carrots, a Bay leaves or two, and in a separa Frying Pan, I sauté chopped Shallots and Lardons, a chopped Garlic, and sliced Chesnut Button Mushrooms.
