Pomegranate opened with Seeds.

Pomegranate is the fruit per excellence of Middle Eastern Asia and West Eastern ones. However one must say that it is widely exported around the World. Pomegranates are widely valued for their edible Seeds which look like Ruby little Jewels.

Pomegranate are in Asia seen as a symbol of fertility and life. It is often represented in artefacts throughout the Orient. Not only that the skin, peel of Pomegranates can be used to make a dye for fabulous Oriental Tapisseries.

The Culinary usage for Pomegranate Seeds is wide. There I will mention the Juice which can be made from the Seeds is deliciouly refreshing. Remembering my Childhood in France, we used to have it during the Summer by the beach, in a lovely wooden shack at Colignon. It was my favourite to choose from their menu of drinks. I loved the sweet tartness of 'Grenadine', the name for that Juice in France. Grenadine like Menthe à l'Eau were popular drinks for Children during Summer days.

Pomegranate Juice. It can be done with either Water or Sparkling Water and decorated with some Pmegranate Seeds, Mint Leaves, a slice of Lemon, Orange or Lime, but also serve with Ice Cubes.

The Seeds can also make Pomegranate Molasses which is a Paste/ thick Sauce. It is rather delicious. I used it for the first time by trying a recipe from Sabrina Ghayour. The recipe was such a total success bursting of flavours that I subsequently bought her book which I did enjoy so much that I did get even more by the British-Iranian Chef. I can only urge people who don't her recipes to try them at home. They are simply delish.

When you try Pomegrante Molasses, I would say you are straight away sold upon them, so much that I had hide the bottle of them because my Partner sarted to eat them with a little spoon. But Molasses are better used to impart flavour to Dishes.

Pomegranate Seeds are not only for the decoration of Dishes, they impart their sweet and tangy flavour to them. They are often used within Salads either warm or cold. They do compliment also white Meat like Chicken and Turkey, but also Lamb. You can cook Lamb in Pomegranate Molasses as well, in a comforting stew/curry with chopped Tomatoes, a chopped Aubergine, chopped Red Onions, a little Lamb Stock, with Spices added to the mix. This dish can be served with Rice which the onctuous Sauce will cover.

This is Pork Chops in a Pomegranate Sauce.  Pork is a white Meat which goes well with the acidity and sharpness but also sweetness of fruits.

If we spoke of Savoury dishes, we must not forget that Pomegranate either with its Seeds or Molasses can be part of lovely sweet desserts such as a Chocolate and Pomegranate Tart, or to enhance a Triffle. It could also be within a Bread or a Muffin. It will not be for decoration only but for taste and flavour.
