Chicken Liver Salad.

Offals can sound awful for a lot of us. However if I do not favour them especially due to my childhood and the Tourville School canteen, I do appreciate them a little tiny more nowadays. But I have limits in per say that I decline to eat either heart or brain. That is a big no-no for me.

However I do appreciate Kidneys. Devilled Kidneys was probably the Dish which made me change my mind about them. 

Then it will be Liver, I do like Liver with Mash Potatoes served with a good Onion Gravy. It is Winter Food for me, or when the day is cold outside. Liver also are very nutritous.

In my family, my Mum was probably the only one who wasn't deterred that much by Offals. Although she disliked Lamb's brain. But what rocked her boat as per say was Trippes, especially the one made at the 'mode of Caen'. In Normandy, Trippes are traditional. Pigs were bred, spending their days mainly outside eating Apples under the Apple Trees and being fed Acorn. But when the time did come and the Pig became Pork, no part of the animal was not consumed.

Other Cultures tend to do the same, in far East Asia for exemple. Chinese Cuisine have a lot of dishes containing Offals. Trippes being one of their favourites. One of their dishes is Northern Eastern Blood Sausage served upon Chinese Pickled Cabbage. In Shangai they do like Braised Intestines.
