A Selection of Baby Leeks

When I was a child I really dispised Leeks with a passion, I hated them finding them too fibrous with the fibres sticking in your teeth. My worst nightmare was to find out that we would have another Leek Soup for Dinner or Potato and Leek Soup for Dinner.

However nowadays, or since I truly learnt to cook a bit, because I had to, around twenty years old, I like my Leeks.

Baby Leeks, smaller in size than the normal ones gives a nice onion but subtle flavour to a salad.

The smaller size of those Leeks make them suitable to even be a Starter or included into Salads. Once cleaned and trimmed a little, you can poached them for ten minutes in a shallow pan just covered up by water, with the juice of half a lemon. Then griddle pan the Baby Leeks to give them the griddle Zebra look. It will cook them a little more as well which will make them tender.

Whilst griddling prepare a French Vinaigrette to go with the Baby Leeks once they are plated. This Starter which is simple will nonetheless impress a friend or a guest especially if you finish it off, for decoration and taste, with chopped Hazelnuts, chopped Chervil or Parsley, a dash of cracked White Peppercorns, and a little Lemon Zest on top: 'Et Voilà'.

If Baby Leeks can make a very decent Starter, they can also be part of a brilliant Brunch once chopped. Let me explain: Sauté the Leeks in a frying pan with a knob of salted Butter. Prepare an Omelette mix by whisking your Eggs and seasoning them, add chopped Dill. Shred some Smoked Salmon (perfect if you have any leftover from a Festive Season). Then it is a matter of covering your Baby Leeks with the Eggs mix and making a lush Omelette. It is simple and fast but also very luxury nice. Within the treasure trove of Omelette will be your Baby Leeks and Smoked Salmon. Served with a wedge of Lemon on the side and a dollop of Creme Fraiche, Brunch will be served.

 Baby Leeks do pair well with Fish. I recommand trying them with Smoked Salmon.
